Quick and Easy Shrimp Fried Rice

This is a really simple recipe for shrimp fried rice. It takes about 30 minutes and let’s face the facts, who wants to spend more than a half hour on dinner these days. Well I do usually, but sometimes it’s good to have a quick recipe in your collection especially when life gets in the way. Fiancé and I just got a puppy and between yelling at him to stop chewing on everything but his toys and taking him out to pee my cooking has to be limited at times. Oh and that little thing called having a job also makes it difficult to cook time consuming dinners all the time. Nevertheless, this recipe may be short on time, but it is not short on taste and if you hate shrimp try it with chicken and if you are a vegetarian than add more veggies!
Ingredients
- Shrimp
- Rice
- Carrots
- Frozen Corn
- Frozen Peas
- Red Bell Pepper
- Onion
- Egg
- Garlic
- Soy Sauce
- Orange Juice
- Olive Oil
- Salt and Pepper
1. Start by making a simple marinade for the shrimp that includes soy sauce, orange juice, a clove of crushed garlic, salt and pepper. Let the shrimp sit in the marinade while you chop and cook up the veggies. I used fresh shrimp and removed the tails but frozen could work too.
2. Next start the rice in a separate pot. I made 1 ½ cups for three people. In a wok or pan heat a few tablespoons of olive oil and add ½ cup of chopped onion and 2 cloves crushed garlic.
3. Next add 1 chopped bell pepper and ½ cup match stick carrots, let it cook for about 5 minutes until soft. Add shrimp and marinade to the wok or pan next.
4. Once the rice is done, add it to the wok and then add additional soy sauce if need be. Fold in frozen peas and corn and combine everything together.
5. Once everything has finished cooking crack 2 eggs into the wok and mix until the egg has cooked throughout the rice. Add salt and pepper to taste.

This sounds delicious! We eat a lot of rice and so we make stir fried rice with the cold leftover rice. Haven't tried it with shrimp and adding the orange juice is interesting. Will have to give this a try. Thanks for the recipe! Yum.
